Grilled shrimp on sugar cane (Chạo tôm)

♥ Ingredients:
(Makes 15 Chạo tôm)

1 12-oz can sugarcane
1½ cup (300 g) shrimp, peeled and deveined
½ cup (100g) pork paste (watch my Pork Paste video for instructions:
¼ cup (50g) pork fat
1 frozen egg white
1 tsp sugar
4 green onions, white part
3 garlic cloves, peeled
A pinch of salt
A pinch of ground white pepper
1 tbsp oyster sauce
1 tsp honey

  • You are so talented. I hope you put the whole repertoire of Vietnamese cuisine on Youtube for the rest of us to learn. I really like how your videos not only show how to cook and but also how to appreciate authentic Vietnamese food, what it looks and taste like – in such a simple and elegant way. Growing up, I only got glimpses of these meals from my grandparents, when they still had the energy to cook eleaborate meals for the whole family. When I watch your postings, it brings back to memories the stories my grandparents used to tell us about their life in Vietnam, which was mostly centered around food and cooking. For those of us who have made a home for ourselves, outside of Vietnam, Vietnamese cooking tutorials in English is such a boon. I hope you know what an anchor your cooking tutorials are for 2nd and 3rd generation people with Vietnamese heritage.

  • Hi van, i have been disappointed by my own recipe of shrimp wonton because i feel it's too porky and not enough shrimpy with the filling. Do you think your shrimp paste for chao tom can be used as filling for my own shrimp wonton?
